Rice
noodles are produced in Thanh My village, Ninh Hoa. Noodles are rolled
into thin circles and small as a bowl, each noodle is placed on a banana
leaf cut round to avoid the pieces from sticking to each other. The
soup served with rice noodle cooked from fish such as marlin, “Be” fish,
tuna that has more protein, fresh meat and chewy. The soup is delicious
when it has the sour of tomato and the natural sweetness of the fish,
not fishy. To enhance the attractiveness of rice noodles with sliced fish meat,
people use meat mackerel, red fish... grinded and chopped onions,
spices create roll into small balls drop into soup or big and thin ball
to fry or steam, cut into thin slices put onto the noodle bowl.
Vegetables served with noodles have to be chopped small, lettuce, herbs,
beansprout, flower of banana tree... For more tasty, squeeze a little
fresh lemon, add a little sauce, crushed chilli, little shrimp sauce or
shrimp paste into the bowl of noodles.
