To understand more about the process of making leaf rice noodles, I found Thanh My village (Ninh Quang commune) - the famous village for leaf rice noodles in Ninh Hoa. The village is nestled on the lush green paddy fields, peaceful.
Visiting the leaf rice noodles production base of Mrs. Chau Thi Sang and Mr. Nguyen Minh Huu’s family, I am taught how to make leaf rice noodles by them. She said the production of noodles is generally quite picky and take a long time. Rice for making noodles must be good ordinary rice. Rice is washed, cleaned and soaked in water overnight. Then put the soaked rice puree in a blender with water to form plastic rice flour, pastes. Flour is kept and then log off the sour water, dried, boiled. Flour is continuously kneaded; mixed in clean water into liquids, then purify dust to form rice starch. After getting rice starch, they will squeeze noodles. This process is done by hand to compress the powder in the mold through the holes. Powder flows through the holes when the mold is twisting, compressing, forming noodles, falling into boiling pot of water below the preset mold. Noodles are blanched in boiling water for a few minutes for well done and picked to quick rinse in cold clean water pot to let the noodles not stick together. Finally picked noodles in pot of water and use hands squeezed into rice noodles.
